ANATOMICAL INFORMATION

The tripe is the digestive system (or stomach) of the cow and is formed by:

THE RUMEN: that is a big sack (almost the 80% of the whole stomach) and that is also called belly.

THE RETICLE: that is compounded by a little sack linked to the rumen, and that looks “spongy” with little crests like hexagonal cells. It is also called cap or bee nest.

THE OMASUM: that is the third (and the last) pre-stomach, and that looks like a sack with many lamellae.

THE ABOMASUS: that is the real stomach.

 

PRODUCTION

Our production comprehends both the tripe (rumen and reticle) and the omasum, that can be prepared raw or baked, entire or already cut. The products are vacuum wrapped and in cartons packed.
