BOVINE TRIPE: PRODUCTION AND SALE

The firm was founded in 1953 by Emiliano Ferrari, which immediately chose the quality and the service as basic conditions of his handicraft activity. In the meanwhile the firm has increased the employees (today also the sons Paolo and Stefano work with the father) and it has improved the production, that today can be fully considered at an industrial level. Since 1996 when the firm obtained the I 808 LOA EEC-identification number - they have been exporting to EEC and extra EEC countries, promoting the quality of the Italian food products - especially those from the area including Parma and Reggio Emilia, home of the leading food production in the whole world.

RAW MATERIALS

The domestic raw materials come from animals that are butchered in EEC authorised factories and that are controlled by official veterinaries, that guarantee their quality and healthiness.
The foreign raw materials coming from the North of Europe and from South America are obtained from high quality cattle through leading slaughtering methods.

COOKING DEPARTMENT

The cooking (or boiling) operations happen directly in boiled water, as described by the ancient culinary traditions.

QUALITY CONTROL

Since 1996 the firm has been applying self control business methods according to HACCP rules. The control of parameters (pre-established during the production) and the application of internal procedures (verified during the time) guarantee the product salubrity.
